I know that the words “banana” and “scramble” don’t go well together, but this recipe will definitely surprise you. It tastes like banana bread pudding more than a scramble, so it can be eaten as breakfast or dessert.
Ingredients:
1 tbsp of coconut oil
1 medium size, very ripe banana, mashed
1 egg
2 tbsp of almond meal or 1/2 tbsp of coconut flour *
1/2 tsp of cinnamon
1/2 tsp of vanilla
1 1/2 tbsp of raisins
Preparation:
- Heat the coconut oil in a skillet.
- Whisk all the rest of the ingredients together and pour into the skillet.
- Wait until the bottom browns a little bit before scrambling the dough, scramble a couple of times, wait for it the brown, scramble again, wait for it to brown and repeat until it is fully cooked. The trick is to let the banana caramelize before you start scrambling it.

*This recipe works a lot better with almond flour.

My favourite way to start my day. You are definitely helping me add -camouflage- eggs to my diet.
So far, I have only used coconut flour and by using 1Tbsp the scramble becomes more fluffy. The first time I made this recipe I omitted the raisins because I could not find them anywhere in my kitchen pantry; it may have to do with my husband helping me put the groceries away, hahaha, that they got hidden somewhere. Nevertheless, I did not miss the sweetness of the raisins; to me the recipe is just perfect without them.
I wonder how it will taste with my homemade coconut ice cream?

I made it as one big pancake instead of a scramble. It’s delicious! You could also add chia seeds or protein powder to make it heartier.

I make this for my 16-year-old son every morning. I have asked him to let me know when he tires of it. Until then, I know he is getting a good breakfast before he heads off to school.

I finally got around to making this today. It was wonderful!! I get tired of having plain eggs for breakfast but feel so much better when I do, so this will be perfect to add some variety. I did not have any raisins but found it perfectly sweet without them. Thank you so much 🙂

I have been making this for awhile and simply love it…! One time I didn’t have the flour so u started to use a little bit of oats and is great too! I also add honey….
