Did you know that a lot of the blueberry muffins and blueberry products you buy at the store, don’t even contain blueberries? How do you stay away from these pseudo-berries? You can read the labels of everything you buy (as you should) or just make these in half the time.

Ingredients:

1/2 cup of coconut flour, sifted
1/4 teaspoon sea salt
1/2 teaspoon baking soda
6 eggs
12 dates
1/4 cup of coconut oil
1 tablespoon vanilla extract
1 cup blueberries, fresh or frozen

Preparation:

  • Preheat oven to 350 F
  • Using a food processor or immersion blender, combine all ingredients except 1/4 of coconut flour and the blueberries, and blend until dates are finely ground
  • Add remaining 1/4 cup of coconut flour and blend until smooth
  • Add the blueberries and mix by hand using a spoon
  • Pour batter into greased or paper lined muffin molds
  • Bake for 25-30 minutes
  • Cool and serve

Makes about 8 large muffins

  1. I made these this morning – yummy! And a nice change from eggs, eggs, eggs. I have to say it’s one of the first coconut flour recipes I have really loved. 🙂

  2. Ok, so I just popped mine in the oven… Question tho. It says pour into cups… Mine was a cookie batter consistency! I swear I followed the recipe perfectly! Hoping they turn out… 🙂
