Ginger Garlic Brussels Sprouts

Tomorrow is “National Eat Your Vegetable Day”, so let’s give this neglected vegetable a little bit of love.
If you have tried Brussels Sprouts and didn’t like them, chances are they were overcooked . Overcooking causes chemicals in the sprouts to react and emit sulphur, giving them that bitter taste and funny smell

Ingredients:

1 lb of Brussels Sprouts, sliced
6 sliced garlic cloves
1/2 to 1 tbsp of fresh ground ginger
2 tbsp of sesame oil
2 tbsp of coconut aminos (soy sauce replacement)
2 tbsp of date paste
2 tbsp of lemon juice
A pinch of salt
Red pepper flakes to taste (optional)

Preparation:

  •   In a large skillet on high heat, sauté the garlic and ginger in the sesame oil until golden brown.
  • Mix in the Brussels sprouts and cook for a couple of minutes
  • Add the rest of the ingredients cover and continue to cook until Brussels sprouts are tender .
