No sifting of flours, or beating eggs, no need for a bunch of mixing bowls or extra dishes. These are the easiest muffins I have ever made, simply toss all ingredients in the food processor, transfer dough to molds, and set in the oven. That’s it!
1 cup of fresh orange juice
1/2 cup coconut oil
3/4 cups of dates (about 16 deglet dates)
2 tsp of vanilla extract
The zest of 3 oranges (about 4-5 tbsp) or 1/2 tsp of orange extract
1 cup coconut flour
1/4 tsp of salt
1 teaspoon non-aluminum baking powder
1 teaspoon baking soda
1/2 cup of apple sauce
- Preheat oven to 350.
- Using a food processor or immersion blender combine all ingredients until dates are finely ground.
- Pour batter into greased or paper lined muffin molds.
- Bake for 25 -30 minutes or until a knife inserted comes out dry

yes, but you may need to decrease the amount of wet ingredients because it would make them too moist

Could you use almond flour instead of coconut?
You could but the ratios would be completely different.You would need a lot more flour and less eggs
How could you substitute the coconut flour for whole wheat flour?
Hi Laura! Honestly I have never used wheat flour before, but I believe you would use more flour and less eggs/wet ingredients
