A Baked Pancake? I know that baking in the morning sounds like just too much work, but this recipe is actually simplifying breakfast by not having to make and turn each pancake individually. Instead, you are only making one big one and while it bakes you can focus getting ready, picking up the kitchen, or making another dish.

I also know that a lot of people have a hard time turning pancakes without breaking or crumbling them, especially when working with grain-free flours, this recipe solves that problem.

Ingredients:

4 eggs
2-4 tbsp of unsweetened cocoa powder
1 ½ cups of almond flour
5-7 dates
½ tsp of baking powder
1/3  to ½ cup of water or coconut water
1 tsp of vanilla extract
1 medium banana, sliced
coconut oil or butter for greasing the mold

Preparation:

  • Preheat oven to 375 F.
  • Using a blender combine all the ingredients (except the bananas) until the dates are completely ground.
  • Grease a 7.5 x 11” baking dish
  • Arrange the banana slices at the bottom of the bowl

Baked pancake

  • Pour the pancake mix over the bananas.
  • Bake for 20 -25 minutes or until a knife inserted in the middle of the pancake comes out dry
  • Serve as is or top with maple syrup or date paste (http://www.edibleharmony.com/date-paste/)

      1. I only see one banana listed in the recipe. I keep reading the ingredients list. Where am I missing the other bananas?

      2. Sorry! Some how I got confused and thought you were responding to my latest recipe (tropical frittata) which calls for 3 bananas, you can totally omit the banana on this one. Someone told me that they used cherries instead and was delicious.

  1. My pancake didn’t turn out as fluffy as pictured about. I followed the recipe exactly. I’m not sure what went wrong. It was very dense and dry. I’m thinking I may need a smaller pan? I use glass or stoneware and for this I used glass. Any tips would be appreciated!

    1. Was the baking dish the same size as the recipe called? Are you using blanched almond flour? The natural almond flour does not fluff up as much. Sometimes the size of the eggs make a difference as well, but you could try a smaller pan

      1. flour blends have other flours besides almonds, so yes, it may not work with my exact recipe. Follow the package instruction for pancakes and add cocoa powder sweetener and bananas
