Apple Pie Energy Bar

One of my daughter’s favorite snacks just got a lot cheaper!!

A friend of ours visited us from Australia and fell in love with Apple Larabars; she couldn’t find them back home and asked me to try to come up with a recipe for a similar bar. This one is pretty darn close.

Kat, I hope you like these.

Ingredients:

3/4 cups of dried apples
3/4 cups of pitted dates (about 18)
1/2 cup of raisins (sultanas)
1/2 cup of walnuts
1 1/2 – 2 tsp of ground cinnamon

Preparation:

  • In a food processor combine the apples, dates, raisins and cinnamon and blend for a couple of minutes  until a ball is formed.
  • Add the walnuts and blend until the walnuts are chopped to desired sized.
  • Press firmly onto a piece of parchment paper forming a large rectangle about 1/2 inch wide.
  • Cool in the refrigerator for a couple of hours.
  • Cut into desired shape.

Makes about 6-7 bars.
Store in an airtight container in the refrigerator

  1. This sounds great and reminds me of Christina Pirello’s pie crust recipe that uses a simple combination of dates and almonds. (YUM!) If you are not familiar with her, you should look her up!

  2. I`m a runner looking for alternatives to GU! (full of artificial ingredients and sugar loaded) I eat Paleo so in my long runs I need something for energy! I wonder if I can substitute the GU (now makes me sick) for this bars!!!?
